As I assume you all can tell from my Instagram, I LOVE GoNana’s because they make tasty, vegan, nut and gluten free banana bread mixes from clean ingredients! The company has been bringing out new flavors of mixes with the latest on being the Gingerbread Banana Bread Mix (which is perfect for this time of year!) I also love that these mixes can be turned into so much more than just banana bread.
With the winter and holiday season officially upon us, I decided to make my own recipe using the Original Mix. I made GoNana’s Peppermint Cookies & Cream Muffin Tops! This is what I used and how I made it:
Ingredients:
- Original GoNana’s Mix
- 3 Bananas
- 2 TBS Milk (can use dairy-free milk)
- 1 TBS Maple Syrup (can use honey or agave)
- 1 TBS Melted Coconut Oil (can use other oils)
- 10 Peppermint Sandwich Cookies (I used the Trader Joe’s Candy Cane Joe-Joe’s Sandwich Cookies)
Instructions:
- Follow the instructions on the back of the Original GoNana’s Mix package
- Add the Peppermint Sandwich Cookies to a Ziploc bag, zip the bag shut leaving minimal air in it, and use something heavy to crush the cookies (I used a wine bottle because WINE NOT lol)
- Fold in the crushed Peppermint Cookie Sandwiches to the batter (if you’re not sure how to fold something in, check out this Schitt’s Creek video – okay sorry if that didn’t help either)
- Scoop the batter onto a cookie tray and bake for 15 minutes
- Enjoy!
This recipe is so easy and so yummy! It can also be made with any type of cookie so if Peppermint isn’t your thing, that’s okay too!
